After seeing them on some of the cooking shows, I picked up a smoke infuser. Kind of neat little gadget that burns a small amount of small wood chips and blows the smoke through a tube into a container that is holding food.
First try was with a piece of salmon. Sprinkled the salmon with some garlic and rosemary then broiled it. When done, put it on a warmed plate, put the smoke bowl over it and lit the cherry chips that I loaded in the infuser. Three minutes of a smoked filled bowl later, we tried the salmon. Not bad. Had a nice little bit of smoke flavor going on and no change to the broiled texture.
Easy to set up and clean up. Not what I'd do if I were feeding several people, but for just the wife and me, it worked well.
