Christmas is just around the corner,,,

Alright,,, I know they are expensive. I couldn't talk myself into it for a long time. But now that I own some, I cherish them. I'm talking about "Grillgrates". Below is a universal set that I have. I can use them on my gas grill, Weber kettle, PK grill, charcoal chimney,,, very versatile. The...

    Opinion on Gas Grills

Grills/Smokers are like screwdrivers,,, each have their own perfect application. For me, gas grills get used during the week after work when time is limited. I just did some center cut chops on a gasser last night.

    Finger lickin' chicken,,,

Today I went and picked up some wood to fuel the beast. Pressure washed and re-seasoned it. Since it was making smoke, figured I might as well put some chicken on it.

How Important is a Certain Brand/Style Smoker?

You can supplement the flavor in an electric cooker by adding a couple pieces of lit charcoal to the wood chip tray,, (lump or briquette).

    Great Smoked Chicken

Whenever I'm asked where to get started in smoking meat, I always share this link for smoked chicken. I always say "if you follow it to a tee,, you'll be very happy with the ending". Truth be told, I made up a batch of the brine just today for a chicken cook this weekend. Chris Grove is a comp...

    Smokin' good times

Custom Pits LLC,,, "Tailgater" model. 5/16" thick cooking chamber, get it hot and it hold temps well. Firebox is where they took shortcuts,,, too thin. But it works,,, so what can you say.

    Cookers I have known,,,

"Old Yeller",,,, a new comer to the fleet. The jury is still out on this one,,,

    Cookers I have known,,,

The patriarch of my cooking fleet,,,,, "Big Ugly". If I could keep just one,,, this would be it. I made it from a 55 gallon drum using Weber 22 inch grill grates. These drum smokers just cannot be beat for ease of use and flavor.

    Cookers I have known,,,

The grand old Weber kettle. Often over looked as a smoker, but a kettle will flat get it done. People laugh when I tell them you can cook competition ribs on a Weber,,,, And don't even try to explain that you can bake on one. Here's a smoked pineapple upside down cake
